Crispy Vegetable Tartare

It is a light starter prepared with a base of tomato, avocado, carrot, yellow pepper, radish accompanied by a rich dressing of balsamic vinegar, lemon and olive oil. Easy to prepare and very lucid. Feel free to prepare it for your next meal.

  • 2 tomatoes
  • 1 carrot
  • 1 avocado
  • 1 yellow bell pepper
  • 3 green onions, with stem
  • 5 radishes
  • 3 sprigs parsley
  • 2 tablespoons lime juice
  • 1 teaspoon balsamic vinegar
  • 4 tablespoons olive oil
  • pepper

  • Boil 1/2 liter of water, put the tomatoes in for 30 seconds and remove them. Peel them, remove the seeds and cut into squares. Peel the carrot. Remove the seeds from the pepper. Cut all the vegetables into small squares.
  • Reserve a few sprigs of parsley to garnish and chop the rest.
  • In a salad bowl, mix the lemon juice, salt, pepper and olive oil.
  • Add the chopped vegetables to the salad bowl and mix well. Put salt, pepper and taste it.
  • Fill 4 ramekin molds with the vegetables pressing a little and unmold them on the plate where we are going to serve them, sprinkle chopped parsley, decorate with a sprig of parsley and a few drops of balsamic vinegar.
  • I can make them ahead of time and keep in the fridge.
