Crispy Vegetable Tartare

It is a light appetizer made with tomato, avocado, carrot, yellow bell pepper, and radish, accompanied by a delicious dressing of balsamic vinegar, lemon, and olive oil. Easy to prepare and very impressive. Don't hesitate to make it for your next meal.

  • 2 tomatoes
  • 1 carrot
  • 1 avocado
  • 1 yellow bell pepper
  • 3 green onions, with stem
  • 5 radishes
  • 3 sprigs parsley
  • 2 tablespoons lime juice
  • 1 teaspoon balsamic vinegar
  • 4 tablespoons olive oil

  • Boil 1/2 liter of water, add the tomatoes for 30 seconds and remove them. Peel, deseed, and cut into small cubes. Peel the carrot. Remove the seeds from the bell pepper. Cut all the vegetables into small cubes.
  • Reserve some sprigs of parsley for decoration and chop the rest.
  • In a mixing bowl, combine the lemon juice, salt, pepper, and olive oil.
  • Add the chopped vegetables to the mixing bowl and mix well. Add salt, pepper, and taste.
  • Fill 4 ramekin molds with the vegetables, pressing down a little, and unmold them onto the plate where they will be served, sprinkle with chopped parsley, decorate with a sprig of parsley, and drizzle with balsamic vinegar.
  • You can make them in advance and keep them in the refrigerator.
