Cucumber and Salmon Salad

A fresh cucumber and salmon salad presented to impress.

  • 6 cucumbers, whole
  • 100 grams smoked salmon
  • 2 limes
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 2 tablespoons peppermint, chopped
  • 3 cups arugula, or other chopped lettuce
  • avocados, in cubes
  • cherry tomatoes, optional

  • Peel 5 cucumbers, cutting off the ends first and rubbing them to remove the bitter taste.
  • Cut the cucumbers vertically and remove the seeds from the center with a spoon. Cut the clean cucumber into cubes.
  • Cut the salmon into strips and add the juice of half a lemon.
  • Add the finely chopped lettuce, mix gently with the cucumber, salmon, avocado, and cherry tomatoes.
  • Add the vinaigrette of olive oil, lemon juice, salt, and pepper.
