Ingredients

6 portions
  • 6 cucumbers, whole
  • 100 grams smoked salmon
  • 2 green lemons
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 2 tablespoons Mint leaf, chopped
  • 3 cups arugula, or other chopped lettuce
  • avocados, in cubes
  • cherry tomatoes, optional

Preparation

Peel 5 cucumbers, first cutting the noses and rubbing them to eliminate the sour taste of it.
Cut the cucumbers vertically and remove the seeds from the center with a spoon. Cut the clean cucumber into cubes
Cut the salmon into strips and put the juice of half a lemon.
Add finely chopped lettuce, mix with cucumber, salmon, avocado and cherry tomatoes gently.
Add the olive oil vinaigrette, lemon juice, salt and pepper.

PRESENTATION

Serve in a silver salad bowl making sure to have the salmon on the salad.

No consumo el salmón así que quizá parezca pregunta tonta pero quiero hacer la receta para mi esposo. El salmón se cocina antes de incorporarlo a la ensalada. O solo se deja marinar en el jugo de limon.
