Wash the lettuce and disinfect it. Drain the water very well.
Arrange the leaves on a large plate as a bed to present the avocados.
Cut the avocados in half, lengthwise, and remove the pit.
Cut the salmon into small cubes.
Make a sauce by melting the butter over very low heat so it doesn't burn. Let it cool slightly and set aside.
In another bowl, mix the egg yolks, lemon juice, and heat in a double boiler. Season this mixture with salt and pepper and let it thicken, stirring constantly.
Gradually pour the butter in while whisking over the egg yolk mixture.
Use a little to mix with the smoked salmon. Whatever is left, place it in a sauce bowl.
Fill the avocados with the salmon and place them on the lettuce plate. Garnish with lemon slices.
