Smoked Salmon Stuffed Avocado

Smoked salmon and avocado contain healthy fats for human consumption, so I recommend this stuffed avocado recipe for a healthy dish.

  • 3 avocados
  • 200 grams smoked salmon
  • 6 leaves lettuce
  • 6 slices lime, very thin
  • 200 grams butter
  • 3 egg yolks
  • 1 tablespoon lime juice
  • salt, and pepper

  • Wash the lettuce and disinfect it. Drain the water very well.
  • Arrange the leaves on a large plate as a bed to present the avocados.
  • Cut the avocados in half, lengthwise, and remove the pit.
  • Cut the salmon into small cubes.
  • Make a sauce by melting the butter over very low heat so it doesn't burn. Let it cool slightly and set aside.
  • In another bowl, mix the egg yolks, lemon juice, and heat in a double boiler. Season this mixture with salt and pepper and let it thicken, stirring constantly.
  • Gradually pour the butter in while whisking over the egg yolk mixture.
  • Use a little to mix with the smoked salmon. Whatever is left, place it in a sauce bowl.
  • Fill the avocados with the salmon and place them on the lettuce plate. Garnish with lemon slices.
