1 cucumber, peeled, seeded and julienned
1 tablespoon salt
2 arabic bread, large
1/2 heads romaine lettuce
3 tomatoes, chopped
6 sprigs chives, chopped
2/3 cups fresh parsley, chopped
1/4 cups fresh cilantro, chopped
2 tablespoons peppermint, chopped
1/3 cups olive oil
1/4 cups lime juice
1 clove garlic
pepper, to taste
kalamata olives

Start by putting the cucumbers in a strainer with the tablespoon of salt, let them drain for 30 minutes.
Meanwhile, bake the Arabic bread until lightly toasted, remove from the oven and cut into strips or chunks.
In a deep bowl, mix the cucumbers, lettuce, tomato, chives, parsley, coriander and mint.
In another bowl with a balloon whisk mix the olive oil, lemon juice, garlic, salt and pepper.
Add the dressing to the salad, mix well, and add the Arabic bread. Mix again and serve.
