2 tablespoons olive oil
1 tablespoon mustard
4 tablespoons balsamic vinegar

Wash the lettuces, soybean sprouts, and arugula well.
In a small bowl, mix the mustard, oil, vinegar, and finely chopped green onion.
Place the lettuce, arugula, soybean sprouts, chopped apple, and blueberries in a large bowl.
At the moment of serving, add the dressing and sprinkle the sunflower seeds on top.
