Fresh Avocado, Strawberry, and Chicken Breast Salad

Delicious salad made with strawberries, cucumber, carrot, tasty FUD® Reduced Fat Panela Cheese, and Roasted Chicken Breast®. Accompanied by a sweet and flavorful balsamic vinaigrette. Delicious and easy to prepare!

  • 1 cup balsamic vinegar
  • 1/2 cups sugar
  • 1 tablespoon garlic, finely chopped
  • 1/2 tablespoons thyme
  • 400 tablespoons Fud® low fat panela cheese, cut into medium sticks
  • 1 avocado, cut into wedges
  • 2 cups mixed lettuce
  • 1 cucumber, cut into slices and roll them up
  • 2 carrots, grated
  • 1 cup strawberries, cut in half
  • 10 slices Fud® roasted chicken breast, cut into strips

  • For the vinaigrette, heat balsamic vinegar in a small pot over medium heat, add sugar, garlic, thyme, and cook until reduced by half. Set aside the vinaigrette.
  • Heat a grill pan over high heat and grill the avocado and FUD® Reduced Fat Panela Cheese until you get the classic grill marks. Set aside.
  • In a bowl, mix the lettuces, cucumber, carrots, and strawberries.
  • Serve on a plate and add the grilled avocado and FUD® Roasted Chicken Breast.
  • Accompany with the vinaigrette.
