For the fruit salad, cut the grapefruit and orange, and place any juice that drips onto the cutting board into a bowl. Squeeze the juice from the citrus into the container. Set aside the orange segments.
Add the same amount of sweet corn syrup.
Grate the lemon peel, avoiding the white part.
Combine the citrus juice. Mix the water and sugar in a small saucepan. Heat until the sugar has dissolved, stirring a couple of times. Add the lemon zest and ginger, bring to a boil, then reduce the heat to a simmer. Cool and let rest for 10 minutes.
Slice the banana into rounds, and cut the grapes into rounds as well.
Mix all the fruits together.
