Fresh Watermelon Salad

Delicious and fresh arugula salad with watermelon, feta cheese, and olives.

  • 1 watermelon, small, seedless, diced
  • 20 kalamata olives, halved
  • 2 cups arugula, washed
  • 1/3 cups red onion, finely chopped
  • 3/4 cups feta cheese
  • 1 head shallot, or finely chopped shallots, for the vinaigrette
  • 1/2 cups sherry vinegar, or sherry vinegar, for the vinaigrette
  • 1 cup olive oil, or grape seed oil, for the vinaigrette
  • salt, to taste
  • pepper, to taste

  • For the vinaigrette: mix the shallots with the vinegar and add the oil while whisking. Season with salt and pepper.
  • For the salad: mix watermelon, olives, arugula, lettuce, red onion, and vinaigrette. Add the diced feta cheese.
