1 watermelon, small, seedless, diced
20 kalamata olives, halved
2 cups arugula, washed
1/3 cups red onion, finely chopped
3/4 cups feta cheese
1 head shallot, or finely chopped shallots, for the vinaigrette
1/2 cups sherry vinegar, or sherry vinegar, for the vinaigrette
1 cup olive oil, or grape seed oil, for the vinaigrette
salt, to taste
pepper, to taste

For the vinaigrette: mix the shallots with the vinegar and add the oil while whisking. Season with salt and pepper.
For the salad: mix watermelon, olives, arugula, lettuce, red onion, and vinaigrette. Add the diced feta cheese.
