Ingredients

8 portions
  • 1 watermelon, girl, without seeds in pictures
  • 20 kalamata olives, to the half
  • 2 cups arugula, washed
  • 1/3 cups red onion, finely chopped
  • 3/4 cups feta cheese
  • 1 head shallot, or shallots minced, for the vinaigrette
  • 1/2 cups Sherry vinager, or Sherry vinegar, for the vinaigrette
  • 1 cup olive oil, or grape seed oil, for the vinaigrette
  • salt, to taste
  • black pepper, to taste

Preparation

For the vinaigrette: mix the shallots with the vinegar and add the oil beating. Season with salt and pepper.
For the salad: mix watermelon, olives, arugula, lettuce, purple onion and vinaigrette. Add the feta cheese in squares.
