Apple and Pomegranate Salad

The ideal season to enjoy pomegranate is from mid-September to well into autumn. This is a great recipe to savor its full flavor and vibrant color.

  • 2 tablespoons pomegranate syrup
  • 4 teaspoons red wine vinegar
  • 5 tablespoons pomegranate, seeds
  • 1 tablespoon honey
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • 1/4 cups extra virgin olive oil
  • 2 apples, pitted and cubed
  • 50 grams spinach, chopped
  • 1 artichoke heart, sliced
  • 1/3 cups walnuts, chopped, toasted
  • 50 grams blue cheese, crumbled

  • Mix the syrup with the red wine vinegar, pomegranate seeds, honey, salt, and pepper, whisking well, and then slowly add the olive oil.
  • Combine the apples, spinach, lettuce, walnuts, and cheese in a large bowl.
