Apple Salad with Chickpeas and Walnuts

Delicious and fresh salad ideal for dinner made with lettuces, walnuts, and chickpeas, accompanied by toasted chickpeas and a touch of fresh green apple. A delightful dinner for a light sleep.

  • 2 cups Eva® lettuce, chopped
  • 1 cup arugula, chopped
  • 1 cup green apple, cut into thin slices
  • 1/4 cups chickpeas, toasted
  • 1/4 cups walnuts, toast
  • 2 teaspoons olive oil
  • 1/4 cups strawberries
  • 1 pinch salt
  • 1 pinch pepper
  • 3 tablespoons vinegar, raspberry

  • In a bowl, add the lettuce, arugula, green apple, chickpeas, and walnuts. Mix very well. Set aside.
  • Add olive oil, strawberry, salt, pepper, and raspberry vinegar to the blender. Blend very well.
  • Serve the salad on a plate and add the strawberry vinaigrette to dress it.
  • Enjoy.
