250 grams kale, cut into small pieces
150 grams quinoa, cooked and drained
3 peaches, cut into small wedges
4 tablespoons sunflower seeds, peeled and without skins
1/4 red onions, sliced
5 tablespoons parsley, finely chopped
1/2 cups cranberries
2 tablespoons balsamic vinegar
1/2 cups extra virgin olive oil
4 tablespoons honey
1 teaspoon ground pepper

In a bowl, mix the kale, quinoa, peaches, sunflower seeds, onion, parsley, and blueberries.
In another bowl, combine the vinegar, salt, pepper, honey, and olive oil. Stir very well to emulsify the vinaigrette.
Drizzle the salad with this dressing.
