Lettuce and Strawberry Salad

  • 2 tablespoons white vinegar
  • 1 1/2 teaspoons honey
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoons salt
  • 1/2 teaspoons black pepper, freshly ground
  • 1 1/2 cups strawberries, cleaned and quartered
  • 1/3 cups red onion, slice
  • 6 cups mixed lettuce, (Italian, escarole), washed and sanitized
  • 60 grams goat cheese, crumbled
  • 1 cup pink shrimp, cooked and cleaned

  • Whisk together the balsamic vinegar, honey, extra virgin olive oil, salt, and pepper.
  • Add the strawberries and the onion, let sit for 15 minutes in the refrigerator.
  • Arrange the lettuces in a large bowl with the cheese and pour the strawberry mixture and dressing over it.
  • Gently stir.
  • Divide onto plates and arrange the shrimp on top of each plate.
