  • 1 kilo watermelon, cut into cubes
  • 1/4 cups lime juice
  • 1 Jalapeño chile, chopped and seedless
  • 1 tablespoon basil, finely chopped
  • 1 tablespoon peppermint, finely chopped
  • 250 grams queso fresco, crumbled
  • 1/2 teaspoons coarse salt
  • 1/2 teaspoons pepper
  • 1/4 teaspoons cayenne pepper
