Fruit with cottage cheese

This recipe is a delicious fruit dish with cottage cheese, whether for a tasty and nutritious breakfast, a mid-morning or afternoon snack, a dessert after lunch, or even for dinner.

  • 1/3 cups olive oil
  • 1/3 cups orange juice
  • 1/2 cups grapefruit juice
  • 1/2 teaspoons table salt
  • 1 cup papaya, cut into small sticks
  • 1 bitter orange, in wedges
  • 1 grapefruit, in wedges
  • 1 cup cucumber, peeled, seedless, and in half-moons
  • 2 cups watermelon, seedless, in small cubes
  • 2 cups cottage cheese, drained
  • 1/3 cups basil, whole

  • Vinaigrette: in a bowl mix oil, salt, and freshly squeezed orange and grapefruit juice.
  • Serve in a salad bowl or deep bowl the papaya, orange and grapefruit wedges, cucumber, watermelon, and cottage cheese.
  • Drizzle with the vinaigrette and garnish with basil.
