  • 1 cup orzo
  • water
  • 1 tablespoon olive oil
  • coarse salt
  • 1/2 cups red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon Dijon mustard
  • salt and pepper
  • 1/2 cups olive oil
  • 1 package NatureSweet® Mixed Peppers
  • 1 cup cucumber, English, in thin slices
  • 1/2 cups green olives, in slices
  • 1/2 cups kalamata olive
  • 1 cup feta cheese, in medium cubes
  • 1 cup Glorys®
  • 1/2 cups red onion, in thin strips
  • 1 tablespoon fresh oregano, for garnish

  • Add the orzo, olive oil, and coarse salt to a pot with enough hot water and cook for 10 minutes. Drain and set aside.
  • In a bowl, mix red wine vinegar, lemon juice, Dijon mustard, salt, and pepper. Slowly incorporate the olive oil. Set aside.
  • Cut the NatureSweet® Mixed Peppers into thin strips and set aside.
  • In a bowl, mix NatureSweet® Mixed Peppers, cucumbers, green olives, Kalamata olives, feta cheese, Glorys®, and red onion.
  • Serve the Greek salad with orzo and garnish with fresh oregano.
