Green Beans with Lemon Parmesan Vinaigrette

This is a delicious way to prepare green beans; the parmesan cheese adds a delightful flavor.

  • 1/2 cups breadcrumbs
  • 1/2 cups olive oil, plus two tablespoons
  • salt
  • 1/2 cups Parmesan cheese, grated
  • lime zest, yellow
  • 1/4 cups lemon juice
  • 1/4 cups whipping cream
  • 1 kilo green beans, clean

  • Preheat the oven to 350ºF. In a small bowl, combine breadcrumbs, 2 tablespoons of oil, salt, and pepper. Spread on a baking sheet and toast for 10 minutes. Let cool and transfer to a bowl with the cheese and stir.
  • In a medium bowl, mix the lemon, zest, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Combine with 1/2 cup of oil.
  • In a large pot, bring salted water to a boil over high heat and cook the green beans in the boiling water for 4 to 6 minutes, then drain.
  • Mix with the vinaigrette, stir, and taste for salt. Transfer to a serving platter and sprinkle with the cheese and breadcrumb mixture.
