Green Soybean Salad with Peas and Lemon

A completely vegetarian salad of edamame or green soybeans mixed with tender and sweet peas, this little salad is accompanied by green onion tops, parsley, and a very fresh touch of mint with strips of yellow lemon peel. A great idea for a side dish.

  • 2 cups edamame, blanched
  • 1 cup peas, blanched
  • 1/2 cups green onion stalks, cut into rings
  • 1/2 cups parsley
  • 1/2 cups peppermint
  • 1/4 cups lemon juice
  • 1 lemon, peel cut into thin strips
  • 2 teaspoons olive oil
  • 1 pinch salt
  • 1 pinch pepper

  • In a bowl, add the edamame with the peas, the green onion tops, the parsley leaves, and the mint leaves.
  • Add the juice of the yellow lemon and the yellow lemon peel cut into strips.
  • Season with olive oil, salt, and pepper to taste, and mix well to ensure the ingredients are evenly incorporated.
  • Serve and enjoy.
