Grilled Peach and Goat Cheese Salad

This salad will make your holidays unforgettable. Try this delicious combination of peaches, arugula, goat cheese, and prosciutto. Once you taste it, it will become your favorite.

  • 1/4 cups balsamic vinegar
  • 2 tablespoons honey
  • 3 peaches, cut into 6 wedges

  • 1/8 teaspoons ground pepper
  • 1 pinch coarse salt
  • 10 cups arugula, chopped
  • 50 grams prosciutto, thinly sliced
  • 3 tablespoons goat cheese, crumbled

  • Reduce the balsamic vinegar in a small skillet over medium heat, allowing it to reduce until only 2 tablespoons remain (about 2 minutes). Remove from heat and add two tablespoons of honey. Let cool.
  • Once the grill is hot, spray with cooking oil and cook the peaches for 30 seconds on each side. If you don't have a grill, you can do this in a skillet.
  • Mix the oil, pepper, and salt in a bowl. Serve the arugula on a plate, top with the peaches and prosciutto, and drizzle with the oil.
  • Add the balsamic reduction and crumbled goat cheese over the entire salad.
