Reduce the balsamic vinegar in a small skillet over medium heat, allowing it to reduce until only 2 tablespoons remain (about 2 minutes). Remove from heat and add two tablespoons of honey. Let cool. Once the grill is hot, spray with cooking oil and cook the peaches for 30 seconds on each side. If you don't have a grill, you can do this in a skillet.
