Grilled Peach Lettuce Salad

Enjoy a fresh and delicious purple lettuce salad with grilled peaches, a mix of seeds, and feta cheese. And to accompany it, a delicious rosemary vinaigrette that gives it a special touch.

  • 4 peaches
  • 2 tablespoons margarine
  • 1 1/2 tablespoons raw sugar
  • 1 Rosetta Eva® lettuce
  • 2 cups feta cheese, in cubes
  • 1/2 cups walnuts, chopped and toasted
  • 1/2 cups almonds, toasted and sliced
  • 1/2 cups cranberries, dehydrated
  • 1/2 cups pumpkin seeds, toasted
  • 1 avocado, in cubes
  • 2 cloves garlic, peeled for the vinaigrette
  • 4 sprigs rosemary, chopped, for the vinaigrette
  • 1/2 teaspoons coarse salt, for the vinaigrette
  • 2 limes, juice for the vinaigrette
  • 1/8 cups white vinegar, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette

  • Cut the peaches into quarters.
  • In a grill pan, melt the margarine and add the sugar, then add the peaches and grill over medium heat until caramelized and marked. Remove and set aside.
  • In a bowl, mix the chopped Rossetta Eva® lettuce with the cheese, walnuts, almonds, blueberries, pumpkin seeds, and avocado.
  • For the vinaigrette, use a mortar to crush the garlic with the rosemary and salt until it forms a paste.
  • Transfer to a bowl and mix with the lemon juice and vinegar. Emulsify gradually with the olive oil.
  • Serve the salad with the peaches and the vinaigrette.
