In a grill pan, melt the margarine and add the sugar, then add the peaches and grill over medium heat until caramelized and marked. Remove and set aside.
In a bowl, mix the chopped Rossetta Eva® lettuce with the cheese, walnuts, almonds, blueberries, pumpkin seeds, and avocado.
For the vinaigrette, use a mortar to crush the garlic with the rosemary and salt until it forms a paste.
Transfer to a bowl and mix with the lemon juice and vinegar. Emulsify gradually with the olive oil.
Serve the salad with the peaches and the vinaigrette.
