Grilled Vegetable Salad with Mango Vinaigrette

  • 2 tablespoons Extra Special Olive Oil®
  • 1 bag Extra Special® eggplant
  • 1 bag Extra Especial® brussels sprouts
  • 1 bag artichoke Extra Special®
  • 1 bunch asparagus
  • 1 tablespoon Great Value® plain salt
  • 1/2 tablespoons pepper
  • 2 cups spinach
  • 1 cup raspberries, in halves
  • 1 cup cherry tomato, In rooms
  • 1 cup arugula
  • 1 cup mango
  • 1 teaspoon peppermint
  • 3 tablespoons Extra Special® extra virgin olive oil with rosemary
  • 1 tablespoon white vinegar

  • In a grill pan add olive oil, place the aubergines, Brussels sprouts, artichokes, asparagus, season with salt and pepper, grill until golden brown.
  • For the dressing, blend the mango, with the mint, the olive oil, the white vinegar, season with salt and pepper.
  • In a bowl add spinach, grilled vegetables, raspberries, tomatoes and arugula. Accompany with the mango dressing.
