Italian Roasted Mushrooms

Prepare this delicious mix of mushrooms, cherry tomatoes, fennel, cauliflower, and roasted garlic with a touch of Italy using a blend of fine herbs, olive oil, and sea salt. A great option for a warm salad.

  • 1 kilo button mushrooms
  • 1/2 cauliflowers, cut into small pieces
  • 1 cup cherry tomato, various colors
  • 1 fennel, cut into medium pieces
  • 1 jar Extra Special® soft garlic cloves with fine herbs
  • 3 teaspoons Extra Special® organic sea salt
  • 1 teaspoon pepper
  • 1 tablespoon Italian seasoning
  • 1 tablespoon basil, for decoration
  • 3 tablespoons Parmesan cheese, grated

  • Preheat the oven to 180°C.
  • In a large bowl, mix together the mushrooms, cauliflower, tomatoes, fennel, and garlic very well with the vinegar, olive oil, salt, pepper, and herbs.
  • Place on a baking tray and roast for about 20 minutes or until the vegetables are tender, stirring occasionally.
