1 kilo button mushrooms
1/2 cauliflowers, cut into small pieces
1 cup cherry tomato, various colors
1 fennel, cut into medium pieces
1 jar Extra Special® soft garlic cloves with fine herbs
3 teaspoons Extra Special® organic sea salt
1 teaspoon pepper
1 tablespoon Italian seasoning
1 tablespoon basil, for decoration
3 tablespoons Parmesan cheese, grated

Preheat the oven to 180°C.
In a large bowl, mix together the mushrooms, cauliflower, tomatoes, fennel, and garlic very well with the vinegar, olive oil, salt, pepper, and herbs.
Place on a baking tray and roast for about 20 minutes or until the vegetables are tender, stirring occasionally.
