Lemon Chicken Salad

This lemon chicken salad recipe is fresh and perfect for sharing; additionally, it is made with a mayonnaise and cucumber dressing that you will love. Serve it with hard-boiled eggs and use Freshly® by Eva® romaine lettuce, which is ready to use, making it quicker to prepare.

  • 2 Romaine Lettuce Freshly® by Eva®, 3-piece bag
  • 450 grams chicken breast, clean, skinless and boneless
  • 1 teaspoon garlic powder, to season the chicken
  • salt, to season the chicken
  • lime pepper, to season the chicken
  • 2 tablespoons olive oil, to cook the chicken
  • 1/4 cups water, to cook the chicken
  • 1/2 cups low-fat mayonnaise, for the dressing
  • 1/2 cups sour cream, low-fat, for the dressing
  • 2 cloves garlic, peeled, for the dressing
  • 1/2 cucumbers, peeled and seedless, diced
  • 2 serrano chiles, without tails or seeds, for the dressing
  • 3 tablespoons lime juice, seedless, for the dressing
  • 1/2 bunches cilantro, only leaves, for the dressing
  • 1/2 cups celery, finely chopped
  • 1 cup apple, peeled, in medium cubes
  • 1/4 cups onion, finely chopped
  • 1 egg, cooked, sliced
  • 1/4 cups cilantro, leaves, for garnish
  • lime, cut into quarters, for garnish

  • Season the chicken breast with garlic powder, enough salt, and pepper with lime. Set aside.
  • Pour the olive oil into a hot skillet and brown the chicken breast on both sides over medium heat, then lower the flame, add water, cover, and cook for 20 more minutes on low heat or until the chicken is cooked. After the time is up, slice the chicken and set aside.
  • Prepare the dressing. Blend the mayonnaise along with the cream, garlic, cucumber, serrano chili, lime juice, cilantro, and enough salt and pepper until you get a smooth mixture.
  • Cut the Freshly® by Eva® romaine lettuce into strips, place in a bowl, and mix with the celery, apple, and onion, gradually pour in the dressing and combine.
  • Serve the lemon chicken salad in a bowl, place the sliced chicken, add the hard-boiled egg, cilantro, and accompany with lemon.
