Lentil and Chickpea Salad

  • 1 lettuce
  • 2 cups lentils, cooked
  • 2 cups cherry tomato
  • 1/2 red onions, cut into small cubes
  • 1 cup chickpea , cooked
  • 4 tablespoons lemon juice
  • 1/3 cups olive oil
  • salt and pepper
  • 1 pinch dried oregano
  • 1/2 cups soy sauce
  • 1 tablespoon mustard

  • Wash and disinfect all the vegetables thoroughly.
  • Add mustard, soy sauce, lime juice, salt, pepper, and dried oregano in a bowl. While mixing with a whisk, gradually add the olive oil in a steady stream.
  • In the same bowl, add the chopped onion, cherry tomatoes, cooked chickpeas, and cooked lentils. Mix all the ingredients well along with the vinaigrette.
  • Add the lettuce cut into large squares and mix it with the other ingredients of the lentil and chickpea salad.
