Mango, Jícama, and Avocado Salad

This salad is super refreshing for a hot summer day. The mix of sweet and savory flavors goes very well together.

  • 2 avocados, cut into cubes
  • 1 1/2 cups jicama, peeled and cubed
  • 1 cup mango, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
  • 3 tablespoons olive oil
  • 1/2 teaspoons salt
  • 1 shallot, finely chopped

  • Cut the avocados, jicama, and mango into cubes and set aside. Chop the cilantro.
  • Mix the lime juice, orange juice, olive oil, salt, and finely chopped shallot with a whisk. Add the avocados, jicama, mango, and cilantro. Stir and add more salt if needed.
  • Serve immediately.
