Preparation
Cut the avocados, jicama and mango cubes and reserve. Chop the coriander.
Mix the lemon juice, orange juice, olive oil, salt and finely chopped echallot with a balloon whisk. Add the avocados, jicama, mango and cilantro. Stir and add more salt if necessary.
Serve immediately.
