Mediterranean Chicken Salad

  • 4 chicken breasts, flattened
  • 1/4 cups olive oil, more extra for the grill
  • 1 tablespoon italian seasoning
  • lime juice
  • 1/4 cups black olives
  • 1/2 cups feta cheese
  • 1/2 red onions, thinly sliced
  • 1 Romaine lettuce, cleaned and chopped into pieces

  • cherry tomatoes

  • Preheat the grill. When the grill is hot, brush it with olive oil.
  • Season the chicken breasts with salt and pepper and place them on the grill for 4 minutes on each side.
  • In a large bowl, mix the olive oil, Italian seasoning, the juice and zest of half a lemon, salt, and pepper. Reserve two tablespoons of the mixture for the dressing.
  • Add the olives, cheese, onion, cherry tomatoes, and lettuce to the rest of the dressing mixture. Mix until homogeneous, being careful not to crush the ingredients.
  • Divide the salad into 4 plates and place the chicken breasts on top. You can cut them into strips if you prefer.
  • Finish the dish by adding the dressing you set aside.
