Preheat the grill. When the grill is hot, brush it with olive oil.
Season the chicken breasts with salt and pepper and place them on the grill for 4 minutes on each side.
In a large bowl, mix the olive oil, Italian seasoning, the juice and zest of half a lemon, salt, and pepper. Reserve two tablespoons of the mixture for the dressing.
Add the olives, cheese, onion, cherry tomatoes, and lettuce to the rest of the dressing mixture. Mix until homogeneous, being careful not to crush the ingredients.
Divide the salad into 4 plates and place the chicken breasts on top. You can cut them into strips if you prefer.
Finish the dish by adding the dressing you set aside.
