Preheat the grill. When the grill is hot, varnish it with olive oil.
Sprinkle the chicken breasts and put them on the grill for 4 minutes each side.
In a large bowl mix the olive oil, the Italian seasoning, the juice and grated lemon zest, salt and pepper. Reserve two tablespoons of the dressing mixture
Add the olives, cheese, onion, cherry tomato and lettuce to the rest of the dressing mixture. Mix until homogeneous, careful not to crush the ingredients.
Divide the salad into 4 plates and top with the chicken breasts. You can cut them into strips if you prefer.
Finish the dish by adding the dressing you set aside.
