  • 1 cup chickpeas, cooked
  • 1 cup cherry tomato, halved
  • 1 cup cucumber, diced
  • 1 cup feta cheese
  • 1 cup red onion
  • 1 cup black olives, boneless and halved
  • 1/4 cups parsley, finely chopped
  • 1/2 cups olive oil, for the vinaigrette
  • 1/3 cups balsamic vinegar, for the vinaigrette
  • 2 tablespoons mustard, for the vinaigrette
