Mediterranean Salmon Salad

You will love this Mediterranean salmon salad, as it is very easy to prepare, has Mediterranean flavors, and is ideal for including something different in your menu. Additionally, it is made with Eva® Lettuce, which is always ready for consumption, as you don’t need to wash or disinfect it, so this recipe is super quick to prepare.

  • 3 tablespoons lime juice, for the vinaigrette
  • 1 tablespoon ginger, grated, for the vinaigrette
  • 2 tablespoons apple cider vinegar, for the vinaigrette
  • 1 tablespoon honey, for the vinaigrette
  • 1 tablespoon peppermint, finely chopped, for the vinaigrette

  • pepper, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette
  • 1/2 red onions
  • 1/2 cucumbers
  • 1/2 cups cherry tomato
  • 1 cup Eva® butterhead lettuce
  • 1/2 cups feta cheese, in cubes
  • 1/4 cups black olives, boneless
  • 1 cup smoked salmon
  • 2 tablespoons candied sesame seeds

  • For the vinaigrette: Mix lemon juice with grated ginger, apple cider vinegar, honey, mint, and enough salt and pepper in a bowl. Whisk with a hand whisk while gradually pouring in the olive oil until emulsified, that is, until you achieve a uniform mixture. Reserve until use.
  • Slice the red onion into strips, the cucumber with the skin into half moons, and the cherry tomatoes in halves. Reserve.
  • Assemble your salad: Place a bed of French Eva® Lettuce leaves, add the sliced onion, cucumber, cherry tomatoes, feta cheese, black olives, and on top place the smoked salmon in the shape of a rose, rolling each piece of salmon one by one. Accompany with vinaigrette and candied sesame seeds.
