Nopal Salad with Black Beans

Delicious and fresh salad of cured nopales with salt, accompanied by fresh cilantro, black beans, tomato, fresh green fava beans, and red onion dressed with a lemon vinaigrette. Ideal for following a healthy and nutritious diet.

  • 1/2 cups lime juice, for the dressing
  • 1 cup olive oil, for the dressing
  • 1 clove garlic, for the dressing
  • 3 tablespoons honey, for the dressing
  • 1 pinch salt
  • 1 pinch pepper
  • 2 nopales, cut into strips
  • 1/2 cups coarse salt, for the nopales
  • 1/4 red onions, sliced
  • 1/2 cups black beans, without liquid
  • 1/4 cups fresh cilantro, chopped
  • 1/4 cups fava beans, green, blanched
  • 1 cup tomato, cut into cubes
  • 1 pinch oregano

  • Add lemon juice with olive oil, garlic, and honey to the blender, season with salt and pepper, and blend thoroughly so that the ingredients are well incorporated. Reserve the mixture.
  • In a bowl, add the cut nopales with the coarse salt and rub them until they have a smooth consistency and take on a bright green color. Rinse the nopales with plenty of water to avoid excessive saltiness. Drain the nopales to prevent them from being slimy.
  • In a bowl, mix the nopales with red onion, black beans, cilantro, fava beans, and tomato, seasoning with a little oregano to taste.
  • Enjoy.
