Add lemon juice with olive oil, garlic, and honey to the blender, season with salt and pepper, and blend thoroughly so that the ingredients are well incorporated. Reserve the mixture.
In a bowl, add the cut nopales with the coarse salt and rub them until they have a smooth consistency and take on a bright green color. Rinse the nopales with plenty of water to avoid excessive saltiness. Drain the nopales to prevent them from being slimy.
