Caesar Salad with Pasta

The classic creamy Caesar salad, but now in its version with elbow pasta. Treat yourself and prepare this salad that has a dressing made with anchovies, a base of lettuce, crunchy homemade croutons, and... why not? Pasta! You will surely love it.

  • 1 baguette, cut into cubes

  • Preheat the oven to 180°C.
  • For the croutons, in a bowl mix the bread cubes with the oil, salt, pepper, oregano, and paprika. Place on a baking tray and bake until golden, stirring occasionally.
  • In a pot, boil the water and add salt. Cook the Moderna® elbow pasta according to the package instructions, drain, and cool.
  • For the dressing, using a fork, mix the yolks with the garlic and anchovies, trying to mash the anchovies as much as possible to obtain a puree. Add the mustard, lemon juice, and season. Drizzle in the olive oil, emulsify very well, and set aside.
  • In a bowl, mix the lettuce with the pasta and the dressing.
  • Serve the salad, add the croutons, and accompany with grated Parmesan cheese.
