For croutons, in a bowl mix bread cubes with oil, salt, pepper, oregano and paprika. Place on a baking sheet and bake until golden, stirring occasionally.
In a pot, boil the water and add salt. Cook the Moderna® elbow paste according to the package instructions, drain and cool.
For the dressing, with the help of a fork mix the yolks with garlic and anchovies, trying to crush the anchovies as much as possible to obtain a puree. Add the mustard, the lemon juice and season. Pour the olive oil in the form of thread, emulsify very well and reserve.
In a bowl, mix the lettuce with the pasta and the dressing.
Serve the salad, place the croutons and serve with grated Parmesan cheese.
