Caesar Salad with Pasta

  • 1 baguette, cut into cubes
  • 3 tablespoons olive oil
  • salt and pepper
  • paprika
  • oregano
  • water
  • 200 grams La Moderna® elbow pasta 3
  • 2 liters water, (1L per c / 100g pasta)
  • 2 egg yolks, for the dressing
  • 1 clove garlic, finely chopped, for dressing
  • 2 anchovy, for the dressing
  • 2 tablespoons Dijon mustard, for the dressing
  • 1/2 cups lime juice, for the dressing
  • 1/2 teaspoons salt, for the dressing
  • 1/4 teaspoons white pepper, for the dressing
  • 1/2 cups olive oil, for the dressing
  • 1 Romaine lettuce
  • 4 tablespoons Parmesan cheese, grated

  • Preheat the oven to 180 ° C.
  • For croutons, in a bowl mix bread cubes with oil, salt, pepper, oregano and paprika. Place on a baking sheet and bake until golden, stirring occasionally.
  • In a pot, boil the water and add salt. Cook the Moderna® elbow paste according to the package instructions, drain and cool.
  • For the dressing, with the help of a fork mix the yolks with garlic and anchovies, trying to crush the anchovies as much as possible to obtain a puree. Add the mustard, the lemon juice and season. Pour the olive oil in the form of thread, emulsify very well and reserve.
  • In a bowl, mix the lettuce with the pasta and the dressing.
  • Serve the salad, place the croutons and serve with grated Parmesan cheese.
