Ingredients

4 servings
  • 1 piece of baguette cut into cubes
  • 3 spoonfuls of olive oil
  • to taste of salt and pepper
  • to taste of paprika
  • to taste of oregano
  • enough of Water
  • 200 grams of Elbow 3 La Moderna®
  • 2 liters of Water (1L per c / 100g pasta)
  • 2 pieces of egg yolk for the dressing
  • 1 clove of garlic finely chopped, for dressing
  • 2 pieces of anchovy for the dressing
  • 2 spoonfuls of Dijon mustard for the dressing
  • 1/2 Cup of lemon juice for the dressing
  • 1/2 teaspoonful of Salt for the dressing
  • 1/4 of teaspoonful of White pepper for the dressing
  • 1/2 Cup of olive oil for the dressing
  • 1 piece of Romaine lettuce
  • 4 spoonfuls of Parmesan cheese grated

    Preparation

    Preheat the oven to 180 ° C.
    For croutons, in a bowl mix bread cubes with oil, salt, pepper, oregano and paprika. Place on a baking sheet and bake until golden, stirring occasionally.
    In a pot, boil the water and add salt. Cook the Moderna® elbow paste according to the package instructions, drain and cool.
    For the dressing, with the help of a fork mix the yolks with garlic and anchovies, trying to crush the anchovies as much as possible to obtain a puree. Add the mustard, the lemon juice and season. Pour the olive oil in the form of thread, emulsify very well and reserve.
    In a bowl, mix the lettuce with the pasta and the dressing.
    Serve the salad, place the croutons and serve with grated Parmesan cheese.

    PRESENTATION

    Serve with Parmesan cheese.

    TIPS

    Add chicken cubes to the grill and make it delicious and complete.
