I & I Salad

It is a delicious salad, with an explosion of flavors and colors, that doesn't even need a dressing. It is a light salad, for a special dinner like an anniversary with your partner; even the name is inspired by the union with your partner. It is exquisite and unique! You will enjoy it!

  • 150 grams La Moderna® pasta
  • 200 grams lettuce mix, spinach, arugula, and kale, washed and disinfected

  • First, we will prepare the pasta, which is the main ingredient, following the steps on the packaging of La Moderna Rotini pasta. We will boil 6 cups or one and a half liters of water, and add 150 grams of the pasta, letting it cook for 10 minutes over medium heat. Drain the pasta with cold water to stop the cooking, and place it in a bowl to mix with 2 tablespoons of extra virgin olive oil and the two tablespoons of the fine herbs mixture or pesto. Set aside.
  • We will prepare the croutons to accompany our salad. Cut the slices of 12-grain or whole grain bread into small cubes and place them on the grill for a few minutes until completely golden and toasted. Set aside.
  • In a small bowl, mix the red bell pepper with the peaches and their juice, adding pepper to taste and mix. Set aside.
  • In a bowl, we will place our mixture of spinach with kale or lettuces of your choice and arugula, add the pasta and the mixture of peppers with peaches that we set aside, two more tablespoons of olive oil, add the mushrooms, capers, and olives, as well as the two tablespoons of the mixture of white or black sesame with chia and toasted peanuts, and mix everything very well to combine all the ingredients.
