It is a delicious salad, with an explosion of flavors and colors, which does not even need a dressing. It's a light salad, for a special dinner like an anniversary with your partner, even the name is inspired by the union with the couple. It is exquisite and unique! You will enjoy it!

Ingredients

2 portions
  • 150 grams Pasta La Moderna®
  • 200 grams spring mix lettuce, spinach, arugula and kale, washed and disinfected
  • 50 grams mushroom, washed, disinfected and sliced
  • 50 grams black olive
  • 50 grams capers
  • 50 grams peach in syrup
  • 1/4 red peppers
  • 80 grams smoked salmon, in pieces
  • 2 tablespoons black sesame seed, or chia or roasted peanuts
  • 4 tablespoons olive oil
  • 2 tablespoons fine herbes, or pesto
  • 3 slices bread, integral
  • 6 cups Water, boiling
  • to taste black pepper
  • 50 grams goat cheese

Preparation

First, we will prepare the pasta, which is the main ingredient, following the steps of the Rotini la Moderna pasta, we will boil 6 cups or a liter and a half of water, and we will empty 150 grams of the pasta, let it cook for 10 minutes over medium heat. In a small bowl, mix the red pepper, with the peaches and their juice, add pepper to taste and mix. We reserve
In a bowl, we will place our spinach mixture with kale or lettuces that we have chosen and the arugula, add the pasta and the mixture of peppers with peaches that we reserve, two more spoonfuls of olive oil, we will add the mushrooms, the capers and the olives , as well as the two tablespoons of the mixture of white or black sesame seeds with chia and roasted peanuts, and we mix everything very well until all the ingredients are combined.

PRESENTATION

We serve our salad, we add the smoked salmon in pieces, the goat cheese and the croutons. Accompany with rosé wine, and celebrate.

TIPS

We can use for pasta, the mixture of fine herbs or pesto, as dried herbs or pasta, as we find it in the super market. It is not necessary to add a dressing, for the mixture of flavors, but it is to the pleasure to add one of your preference, if you consider it necessary. The spinach mixture, with kale and arugula, is an excellent antioxidant. This salad, besides delicious, is very healthy.
