Ingredients: 150 grams La Moderna® pasta; 200 grams lettuce mix, spinach, arugula, and kale, washed and disinfected; 50 grams button mushrooms, washed, disinfected, and sliced; 50 grams black olives; 50 grams capers; 50 grams canned peaches; 1/4 red bell peppers; 80 grams smoked salmon, in pieces; 2 tablespoons black sesame seeds, or chia or toasted peanuts; 4 tablespoons olive oil; 2 tablespoons fines herbs, or pesto; 3 slices bread, whole grain; 6 cups water, boiling; pepper; 50 grams goat cheese

First, we will prepare the pasta, which is the main ingredient, following the steps on the packaging of La Moderna Rotini pasta. We will boil 6 cups or one and a half liters of water, and add 150 grams of the pasta, letting it cook for 10 minutes over medium heat. Drain the pasta with cold water to stop the cooking, and place it in a bowl to mix with 2 tablespoons of extra virgin olive oil and the two tablespoons of the fine herbs mixture or pesto. Set aside. We will prepare the croutons to accompany our salad. Cut the slices of 12-grain or whole grain bread into small cubes and place them on the grill for a few minutes until completely golden and toasted. Set aside.
