Lent Salad

  • water, for cooking pasta

  • 1 package La Moderna® penne rigate
  • 1/2 cups mayonnaise
  • 1 cup sour cream
  • 1 tablespoon mustard
  • garlic powder
  • 1/4 cups red onion, finely chopped
  • 1/4 cups red bell pepper, in medium cubes
  • 1/4 cups yellow corn, kernel
  • 1/4 cups carrot, finely grated
  • 4 tablespoons chives, finely chopped
  • salt
  • pepper
  • chives, finely chopped, for decoration

  • Heat enough water in a pot and once it boils, add salt and let it boil again. Then, add Pluma La Moderna®, cook for 8 minutes, drain and set aside.
  • In a bowl, mix the mayonnaise, cream, mustard, and garlic powder until well combined.
  • Combine Pluma La Moderna® in the bowl with the mayonnaise mixture, gradually add the vegetables, and mix gently. Season with salt and pepper if necessary.
  • Serve the Lent salad in a baking dish and garnish with chives.
