Mexican Pasta Salad

This Mexican pasta salad recipe is perfect if you want to eat something delicious and very healthy. Also, what better than to accompany your delicious salads with pasta from La Moderna® to make your healthy meal more filling.

  • 5 liters water, to cook the pasta
  • salt, for the pasta
  • 1 package La Moderna® rotini pasta, of 500g
  • 2 cups canned tuna in water, drained
  • 1/2 cups green bell pepper, diced
  • 1/2 cups yellow bell pepper, diced
  • 1/4 cups yellow corn, drained
  • 1/4 cups celery, only stem, diced
  • 1/4 cups deli ham, diced
  • 1/4 cups red onion, sliced into strips
  • 1/2 cups Romaine lettuce, chopped into small pieces
  • 1 1/2 cups cream cheese, diced, for the cream
  • 1/4 cups chipotle chile in adobo sauce, for the cream
  • 1/4 cups olive oil
  • salt, for the cream
  • pepper, for the cream
  • avocado, in cubes, for decoration
  • 1/4 cups cherry tomato, cut in half
  • parsley, finely chopped, for decoration

  • Pour water into a pot on high heat and season with enough salt, add La Moderna® Rotini pasta once it boils and cook according to the time indicated on the package. Drain and set aside.
  • Add the tuna, peppers, corn, celery, ham, red onion, and Italian lettuce to a bowl, then mix in the pasta. Incorporate all the ingredients well.
  • For the cream: blend the cream cheese with chipotle pepper and season with salt and pepper, then add the olive oil and if you like, you can add a splash of milk. You should achieve a creamy consistency.
  • Subsequently, add the cream to the salad bowl and mix very well with a spoon; if you feel it lacks seasoning, you can season right there.
  • Pour the salad mixture into a deep plate and arrange it so that all the ingredients stand out, then decorate the Mexican pasta salad with avocado, cherry tomatoes, and sprinkle parsley.
