Spaghetti War Colors

This recipe was created and inspired by a vegetarian girl named Kathia. Her favorite colors are red and pink, and it is very common to see her wearing very colorful clothes.   • Wash and disinfect the vegetables.
  • Heat 2.5 liters of water in a pot to cook the pasta. When it reaches boiling point, add the beet, onion, garlic, bay leaves, ginger, salt, and pepper. After five minutes, when the beet releases its color, add the spaghetti for about ten minutes or until al dente.
  • Put another pot with 1.5 liters of salted water to cook the vegetables. While the water is boiling, cut the vegetables into long, thin julienne strips. Once the water is boiling, add the previously cut carrot and after two minutes, add the zucchini to the same pot with the carrot for three more minutes.
  • Wash, disinfect, and dry the parsley, then finely chop it. Mix vinegar and olive oil with orange juice, and then add the chopped parsley, stirring well to incorporate all the ingredients. Season with salt, pepper, and honey to taste.
  • Using a paring knife, cut 5 supremes of orange (segments). In a bowl, mix the pasta with the carrot and zucchini, dressing with the vinaigrette and adding salt and pepper to taste if desired. Plate it with height, and the other ingredients are for garnish, decorating as shown in the picture.
