This recipe was created and inspired by a vegetarian girl called Kathia, her favorite color is red and pink, it is very common to see her wearing very colorful clothes, thinking about her last visit in my work I was inspired by her to achieve this creation, When a chef is inspired his imagination has no limits.   • 1 package La Moderna® spaghetti
  • 60 grams white onion
  • 1 clove garlic
  • 3 leaves bay (laurel)
  • 10 milliliters olive oil
  • 150 grams beet
  • 10 grams ginger
  • 100 grams carrot
  • 100 grams pumpkin
  • 20 grams alfalfa germ
  • 3 grams buds, of soy
  • 10 grams pomegranate
  • 2 grams parsley
  • 2 grams amaranth
  • 1/2 ounces white vinegar
  • 11/2 ounces olive oil
  • 3 ounces orange juice
  • to taste honey
  • to taste salt
  • to taste black pepper


Wash and disinfect vegetables.
Put to heat 2.5 liters of water in a saucepan to cook the pasta. when it is boiling, add the beet, onion, garlic, bay leaves, ginger, salt and pepper. After five minutes the beetle releases its color add the spaghetti for about ten minutes or until it is al dente.
Put another saucepan with 1.5 liters of salt water to cook the vegetables. While the water boils, cut the vegetables into long thin strips. Once the water is boiling, add the carrot previously cut and after two minutes add the pumpkin in the same pan with the carrot for three more minutes.
Wash, disinfect and dry the parsley and chop finely. Mix the vinegar, olive oil with the orange juice and then add the chopped parsley, stir well until all the ingredients are incorporated, season with salt-pepper, and honey to taste.
With the help of a knife, remove 5 orange supreme (Gajos). In a bowl, mix the pasta with the carrot and pumpkin, dressing with the vinaigrette and if necessary, taste a bit of salt. Assemble giving height and the other ingredients are accompanying decorating as shown in the photograph.
