The Best Pasta Salad

Cold elbow macaroni salad with vegetables and a sweet touch. It is a very colorful and fresh salad; you can even vary it by replacing the peach with the fruit of your choice, such as pineapple, mango, or apple.

  • 300 grams elbow pasta La Moderna®
  • 250 grams turkey breast, in the oven
  • 1 red bell pepper
  • 1/4 red onions
  • 150 grams mayonnaise
  • 220 grams sour cream
  • 3 stems celery
  • 5 canned peaches
  • 1 pinch salt
  • 1 pinch pepper

  • Cook the pasta according to the package instructions until it is al dente. Drain it and place it in a bowl with ice water to stop the cooking; alternatively, run it under cold water. Set aside.
  • Wash and disinfect the vegetables
  • Roast the red pepper directly over the stove, turning it with the help of tongs to brown it on all sides. Place it inside a plastic bag for a few minutes. Remove the burnt skin with your hands. Cut off the stem, split it open, and remove the seeds and veins.
  • Dice the pepper, celery, peaches, and turkey breast into small cubes (brunoise). Finely chop the onion.
  • In a large bowl, mix all the ingredients, adding the mayonnaise and cream at the end. Season with salt and pepper.
  • Enjoy as an appetizer or as a side dish.
