Tips

You can substitute the peach with the fruit of your preference. If you want it to be healthier, you can replace the mayonnaise with low-fat natural yogurt. If you don't like the taste of raw onion, you can sauté it a little and let it cool before adding it to the salad. If you want to skip the step of roasting the pepper, you can use canned red pepper.
