Pea Salad with Ham and Mint

This pea salad recipe includes serrano ham and mint. You can also add strips of Parmesan cheese.

1 kilo peas, without the pods
150 grams serrano ham, or thick slices of prosciutto
1 clove garlic
2 tablespoons white vinegar
2 sprigs peppermint
2 tablespoons olive oil
4 slices bread
Parmesan cheese, in strips (for decoration)

Shell the peas and cook them in a pot with boiling salted water for about 8 minutes.
Wash the mint sprigs and separate the leaves.
Cut the ham into thin strips and sauté it in a pot with the oil.
Add the chopped garlic and a few seconds later add the well-drained peas.
Cook everything for a few minutes.
Drizzle with vinegar, add the chopped mint, and let it cook for a few more minutes.
Toast the bread.
Serve the salad with slices of toasted bread.
