Pea Salad with Ham and Mint

This pea salad recipe includes serrano ham and mint. You can also add strips of Parmesan cheese.

  • 1 kilo peas, without the pods
  • 150 grams serrano ham, or thick slices of prosciutto
  • 1 clove garlic
  • 2 tablespoons white vinegar
  • 2 sprigs peppermint
  • 2 tablespoons olive oil
  • 4 slices bread
  • Parmesan cheese, in strips (for decoration)

  • Shell the peas and cook them in a pot with boiling salted water for about 8 minutes.
  • Wash the mint sprigs and separate the leaves.
  • Cut the ham into thin strips and sauté it in a pot with the oil.
  • Add the chopped garlic and a few seconds later add the well-drained peas.
  • Cook everything for a few minutes.
  • Drizzle with vinegar, add the chopped mint, and let it cook for a few more minutes.
  • Toast the bread.
  • Serve the salad with slices of toasted bread.
