1 tablespoon olive oil
15 pitted olives
1 head garlic, shelled, not peeled
2 yellow onions , chopped
12 yellow onions , in vinegar
1 egg, hard
lettuce, white
lettuce, lollo rosso
80 grams mayonnaise
1 pinch ground black pepper
1 bell pepper , roasted
1.2 kilos chicken, in pieces
1 pinch salt
1 red beefsteak tomato
1 drizzle vinegar

Cut the chicken and brown it in olive oil, season with salt and pepper.
Add plenty of chopped onion and the garlic head, separated but unpeeled.
Let it cook a little and add the vinegar and pickled onions, allowing it to reduce a bit.
Finally, cover with water and cook until tender.
Wash the lettuces to be used, then dress them with olive oil, salt, and vinegar, in a bowl along with scallions and tomato.
Mix well and place in a serving dish.
Garnish with roasted bell pepper, chicken pieces, olives, mayonnaise, pickled scallions, and hard-boiled egg.
