Pineapple Boat Fruit Salad

If you want to give a unique presentation to the fruit, follow this recipe for pineapple boat fruit salad; it looks spectacular.

  • 1 kiwi
  • 1 mango
  • 1 banana
  • 1 cup watermelon, cut into pieces
  • 1/2 cups blueberries
  • 1/2 oranges
  • 1/4 cups shredded coconut
  • 1/2 cups cottage cheese, LYNCOTT®
  • 1/4 cups granola
  • 1 pineapple

  • Cut a whole pineapple in half lengthwise. Remove the pulp and cut it into cubes. Set aside.
  • The pineapple shell should remain hollow, resembling a deep plate or a boat.
  • Peel and cut the kiwi, mango, banana, and watermelon. Place them in a bowl along with the blueberries and the cut pineapple. Squeeze the juice of ½ orange over them.
  • Arrange the fruit salad inside the pineapple boat.
  • Add LYNCOTT® Cottage Cheese.
  • Sprinkle coconut shavings and granola on top. Serve.
