Potato and Pea Salad

A very rich salad with potatoes, peas, ham, egg accompanied by a dressing of olive oil and lemon that gives a touch of acidity and delicious. It is a fresh salad that you can eat at any time of the year because it also has simple ingredients to find anywhere.

  • 4 potatoes, boiled and peeled
  • 2 cups raw pea
  • 2 eggs, Hard
  • 4 slices serrano ham
  • 1/2 cups olive oil
  • 4 tablespoons lime juice
  • pepper, to taste

  • In a hot pan with 1 tablespoon of olive oil, cook the peas with 1 cup of water and cook for 15 minutes or until they are tender. Get out of the fire.
  • Cut the potatoes, the hard-boiled egg into cubes and pour into a large bowl.
  • Add the peas and mix without crushing the potatoes.
  • In a small bowl, mix lemon juice with salt, pepper and add olive oil.
  • Pour the dressing over the salad and mix well.
