Potato and Pea Salad

  • 4 potatoes, boiled and peeled
  • 2 cups raw pea
  • 2 eggs , hard-boiled
  • 4 slices serrano ham
  • 1/2 cups olive oil
  • 4 tablespoons lemon juice
  • pepper , to taste

  • In a hot skillet with 1 tablespoon of olive oil, sauté the peas with 1 cup of water and cook for 15 minutes or until tender. Remove from heat.
  • Cut the potatoes and hard-boiled eggs into cubes and pour them into a large deep bowl.
  • Add the peas and mix without mashing the potato.
  • In a small deep bowl, mix the lemon juice with salt, pepper, and add the olive oil.
  • Pour the dressing over the salad and mix well.
