Broccoli Salad with Potatoes and Yogurt

  • 200 grams broccoli
  • 2 kilos potato
  • 1 tablespoon salt
  • 2 cups Greek yogurt
  • 3 tablespoons olive oil
  • 3 tablespoons lime juice
  • 1 tablespoon mustard
  • 1/2 teaspoons salt
  • ground pepper
  • 300 grams Parmesan cheese

  • In a large pot, boil 10 cups of water with a tablespoon of salt. Carefully wash the broccoli and separate it into florets. Add ice water; when cooled, drain in a colander and set aside.
  • Wash the potatoes, place them in a pot, and cover them with water. Bring to medium heat until cooked. Remove from water and, when at room temperature, peel and cut into cubes.
  • For the dressing, mix the yogurt, cheese, ½ teaspoon of salt, mustard, olive oil, and lemon in a small bowl, stir well.
  • In a bowl or salad bowl, mix the cooked and drained potatoes and broccoli, add the dressing and mix evenly. It's ready to serve!
