In a large pot, boil 10 cups of water with a tablespoon of salt. Carefully wash the broccoli and separate it into florets. Add ice water; when cooled, drain in a colander and set aside.
Wash the potatoes, place them in a pot, and cover them with water. Bring to medium heat until cooked. Remove from water and, when at room temperature, peel and cut into cubes.
For the dressing, mix the yogurt, cheese, ½ teaspoon of salt, mustard, olive oil, and lemon in a small bowl, stir well.
In a bowl or salad bowl, mix the cooked and drained potatoes and broccoli, add the dressing and mix evenly. It's ready to serve!
