Potato and Tuna Salad

  • 2 cups potato, in medium cubes
  • 1 cup onion, finely chopped
  • 1 cup tomato, in medium cubes
  • 1/2 cups green olives, in slices
  • 1 cup canned tuna, drained
  • 1/4 cups lime juice

  • 1/2 cups olive oil
  • 1 cup avocado, in cubes, for garnish
  • 1 egg, hard-boiled, sliced, for garnish

  • Boil enough salted water in a pot, cook the potatoes for about 10 minutes, and make sure they are well cooked but firm. Remove from heat, drain, and let cool.
  • Mix the cooked potatoes, tomato, olives, and tuna in a bowl, then add the lemon juice, salt, pepper, and olive oil. Combine all the ingredients well.
  • Serve the potato and tuna salad in a bowl and garnish with avocado and slices of hard-boiled egg.
