Potato Salad with Pesto Sauce

  • 1/2 cups FAGE® Total 0% greek style yogurt
  • 2 potatoes
  • 30 grams basil, washed and disinfected
  • 1/4 cups pine nuts
  • 1/2 cups Parmesan cheese, grated
  • 1 pinch pepper
  • 1 tablespoon salt
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 1/2 red onions, chopped into large cubes
  • 1/4 cups fresh parsley

  • Cut the potatoes into medium cubes and boil them in salted water for 10 minutes or until they are soft.
  • Drain the water and cool in a bowl of cold water and ice. Once cool, drain, dry, and set aside.
  • Blend the basil leaves with the pine nuts, parmesan cheese, pepper, and olive oil.
  • Combine the pesto with Yoghurt FAGE Total® 0%, add to the potatoes, chopped onion, and parsley leaves.
