Preparation
Cut the potatoes into medium cubes and cook them in boiling water with salt for 10 minutes or until they are soft.
Remove the water and cool a bowl of cold water and ice. Once they are cold, strain, dry and reserve.
Blend the basil leaves with the pine nuts, the Parmesan cheese, the pepper and the olive oil.
Combine the pesto with the Yogurt FAGE Total® 0%, add the chopped onion and parsley leaves to the potatoes.
